In 1945, Charlie and Frances Grecco opened a small place at 519 Lincoln Avenue in Bedford. They served plate lunches, spaghetti, salads. Then Charlie heard about pizza. He went to New York City, found his Italian relatives, and came back with a sauce recipe that nobody has changed since.
— Jaclyn Sabatier, third generation
That was 81 years ago. Grecco's has had three owners in all that time. Frank Wenzel bought it in 1975. Dave Sabatier bought it in 1990. His daughter Jaclyn grew up in this kitchen — she started washing dishes at 9. The dining room still has the original 1970s wood paneling. The red booths are the same. The recipe hasn't moved an inch.
The building is shaped like a pizza slice. That wasn't an accident. Bedford knows that building. You probably already know it.
